Black-bean and Potato Stew

This is one of my favourite dinners EVER! I love anything with potatoes and the black-beans complement them so well. The avocado topping makes this so healthy and also the best meal ever, I really hope you love this one
Ingredients
Small bag of potatoes (approx 350g), peeled and cut into small bite sized cubes (so they will cook faster)
1 red onion, peeled and chopped finely
2 cloves garlic, crushed
2 tsp paprika
1 tsp cumin seeds
2 tbsp almond butter
2 tbsp tomato puree
1 tbsp harissa paste
2 tbsp pumpkin puree (optional but adds depth to the consistency and flavour)
2 tins black beans, drained
1 tin chopped tomatoes
Liquid base/stock (mix together the following)
1 cup fresh water
1 stock cube
1 tin coconut milk
1 tbsp soy sauce
To serve
Juice of a lime, dash of soy sauce
Cooked rice
Method
Fry the onion in a little oil for 5 minutes until soft
Add the garlic, paprika and cumin and fry for another minute
Add the almond butter, tomato puree, harissa paste and pumpkin purée (if using) and mix it all in
Next add the black beans and tomatoes and stir to combine the flavour
Add the liquid base/stock followed by the potatoes
Simmer for 15 minutes until the potatoes have softened
Use this time to cook your rice and make the avocado smash
Squeeze in the juice of a lime and an additional dash of soy sauce
Serve with rice and mashed avocado/guacamole
