Nando's Rice

This rice is perfect for a fakeaway night in! Serve with some crispy tofu or a cheeky burger and you’re good to go. This rice is also great to enjoy on it’s own as a mid-week lunch.

Add as much spice at the end of cooking as you can handle! I hope you enjoy this dish x


Ingredients

1 onion - diced and sliced finely

1 pepper (any colour) -diced and sliced finely

1 tin chopped tomatoes

2 tbsp spicy Nando’s sauce or 1 tbsp spice seasoning mix

1/2 cup white rice (long grain or basmati)

1 cup water (maybe more to add to the pan whilst boiling)

Salt and pepper to season


Method

  • Rinse the rice really well in COLD water to ensure that the rice will be fluffy and not gloopy when you cook it. You can rinse it several times or alternatively soak the rice for 5 minutes and drain and rinse again before cooking.

  • Fry the onion (in a frying pan) in a splash of oil, I use rapeseed, over a low heat for about 5 minutes

  • Add the pepper and continue to slowly cook until the onions are translucent (you don’t want to brown them, just soften - add a splash of water if they begin to brown)

  • Add the onion and pepper to a medium sized pan and add the Nando’s sauce

  • Add the rice and water and boil according both instructions on the rice packet (usually around 10 minutes) Keep giving the rice a little stir to prevent sticking.

  • Once the rice is cooked to your liking add salt and pepper and fluff up using a fork

  • Add more Nando’s sauce after cooking if you need more heat.

Note - if the rice begins to soak up the water, simply top up the pan with more boiling water to prevent the rice from burning and sticking to the bottom of the pan
