No Bake Healthy Chocolate & Peanut Cookies

You can have a whole batch of these tasty cookies made in just 10 minutes. They are very moreish and are very healthy in comparison to other cookies. They contain no processed sugar, the sweetness comes from natural maple syrup and the fat comes from tasty peanut butter, that means you can have an extra one with your cuppa.


Ingredients

3 tablespoons cacao powder

2 cups peanut butter (smooth or chunky)

1 cup maple syrup

4 cups oats (you can also use gluten free)

Optional handful of chocolate chips


Method

  • Lined a baking tray with baking paper

  • Add the cacao powder, peanut butter and maple syrup to a mixing bowl and stir until combined

  • Add the oats and chocolate chips if using and stir them in until they are all covered in the chocolate and peanut mixture.

  • Roll the cookie mix into small balls and place them on the lined baking tray

  • Flatten each cookie down using the back of your hand and make a pattern in each cookie using the back of a fork to create an indentation.

  • Pop the cookies in the fridge to set and then transfer to an air tight container

These will be best kept in the fridge and are best eaten within a week.
