Pesto Pasta

This pesto is made using Brazil nuts instead of pine nuts because not only are they PACKED with goodness but they also add a lovely flavour to the pesto. The cheesy flavor comes from nutritional yeast that’s also packed with goodness, so you can be sure that you’re getting a good balanced meal with this little homemade jar of pesto. It is also VERY easy to make and it is all whizzed up in one blender and simply poured into cooked pasta or you can also use it to jazz up wraps and sandwiches too.
We enjoyed our pesto over a green pea pasta which is gluten free and the colour with the pesto looked incredibly fresh and so tasty.
Additional sauce will keep fresh in the fridge for a few days
Ingredients
1 small bag of rocket (around 2 handfuls)
1 bunch of fresh basil (about 1 handful)
1 cup of Brazil nuts
Juice of 1 lime
1 tablespoon nutritional yeast
3 tablespoons olive oil
1 cup of water
Salt and pepper to season
Method
Put your favourite pasta on to boil
Add all of the ingredients to a high speed blender and whizz it all up until smooth
Once the pasta has cooked drain and pop the pasta back into the pan
Add the pesto to the pasta and stir through
Sprinkle with a few basil leaves and chopped Brazil nuts
Enjoy as you would your normal bowl of pasta, with a salad or fresh bread.
