Vegan Caramel Cheesecake

This is a really quick and simple cheesecake using our Love Vegan bars, so you can be sure they are tasty, healthy and 100% vegan. This cheesecake recipe is the perfect size for two portions or double/triple the quantity to make a full cheesecake
Ingredients
2 smooth caramel and peanut Love Vegan bars
1/4 cup ground almonds
1 teaspoon melted coconut oil
100g vegan cream cheese
60g smooth peanut butter
2 tablespoons agave (add more if necessary)
Method
Prepare a small tart tin or two individual tart tins by lining with baking paper leaving an overhang of paper so you can easily lift the cheesecake out once it’s set (or use a loose based tin/tins)
Cut off 1/4 of a love vegan bar and leave to one side ready to top the cheesecake once its ready to eat
Blend the remaining vegan bars, ground almonds and coconut oil in a food processor and blend until smooth and fully combined.
Add the base to the tin and press down firmly using the back of a spoon
Add the vegan cream cheese, peanut butter and agave to a small bowl and mix until fully combined. Have a taste to see if you need some more sweetener as some peanut butters are a little salty so you may need more sweetener to suit your taste.
Top the cheesecake filling onto the base and chill for around an hour or two to chill
Sprinkle the top with the 1/4 bar left to one side to decorate before eating
Share with a best friend or a loved one.
This is definitely very moreish so once you’ve made it you’ll soon be doubling the quantities to make it for a family dessert, and nobody will ever guess that it’s 100% vegan and so easy to make. I hope you love this as much as we do.
