Peanut Butter and Cacao Vegan Flapjacks

These flapjacks are secretly healthy and made with our Love Vegan bars and just a few other ingredients. Ready in just four simple steps they’ll be ready to demolish in no time. They are perfect as a mid-week lunch box treat and also great for the weekend as a snack, on the go or to fuel weekend activities.These flapjacks are a good choice if you’re looking for a healthy and tasty treat.


Ingredients

175 g oats (can be GF if needed)

25 g seeds (I used pumpkin and sunflower)

100 g smooth peanut butter

60 g coconut oil

1 tbsp cacao powder

2 Love Vegan bars - any flavour will do. The plain cacao works wonderfully for a rich chocolatey taste and the caramel and peanut will produce a more nutty flavour, then there’s the orange…the coffee…cherry.... so many to choose- just go with your favourite.

Strawberries or other fruit choice to serve


Method

  • Lined a brownie sized tin with some baking paper making sure you leave some paper over the sides so you can easily remove the flapjacks once they’ve set.

  • Blend the Love Vegan bars in a food processor and put the blended bars into a large bowl.

  • Add the seeds and oats and mix together and leave to one side.

  • Add the peanut butter and coconut oil to a small pan and simmer over a low heat until the ingredients have fully melted and mix them together.

  • Pour the peanut butter mixture to bowl with the oaty mixture and mix really well

Have a little taste at this point and feel free to add a choice of sweetener if you prefer your flapjacks sweeter and if the mixture is too crumbly you may also add a little more melted oil.

  • Transfer the mixture to the lined tin and press down firmly using the back of a spoon, making the mixture as compact as possible (this will make it easier to cut once it has been chilled)

  • Place in the fridge for a couple of hours and then slice into chunks
