Chocolate and Vanilla Freezer Fudge

Say hello to my all-time favourite, naturally sweetened and secretly healthy fudge. Made with just 4 ingredients, in less than 10 minutes and using just one bowl. Perfect as a tasty treat that is healthy and will also keep you fuller as it contains nut butter for protein and energy. This incredibly rich vegan fudge is sweet, satisfying and so easy to make.


Ingredients

1 small jar of almond butter (170g)

2 tablespoons of coconut oil

2 tablespoons of maple syrup

1 teaspoon of vanilla paste

1 handful of dark chocolate drops (leave out for 100% naturally sweetened version)


Method

  • Line a brownie sized baking tray with baking paper, ensuring you leave some paper over the sides so you can lift the fudge out once it has set.

  • Place all the ingredients except the chocolate drops into a bowl and pop in the microwave until the coconut oil has turned to a liquid. Alternatively pop the ingredients into a pan and very gently hat until melted.

  • Give the ingredients a good stir until completely combined then pour into the lined tin. (the mixture may be hot due to the oil and nut butter contents so be cautious)

  • Sprinkle the chocolate drops on top of the warm fudgy mixture and as the chocolate melts slowly stir the chocolate until you get a nice marbled effect.

  • Place the tin into the freezer to harden for a couple of hours

  • When it’s completely frozen cut into chunks. 

You’ll need to keep the fudge in the freezer or fridge and eat straight away as it does melt super quickly.
