Pop Tart

These healthier pop tarts still feel fun to eat but are are a much healthier option. For a complete healthy breakfast enjoy one of these with a portion of fruit salad, yoghurt and granola with a plant based latte on the side.
Ingredients
DRY
3 tbsp oat flour (oats blended to a fine flour) Can be G/F
1 tbsp plant protein powder
1 tsp cacao powder
1/4 tsp instant coffee
WET
2 tsp coconut oil
2 tsp boiling water
2 tsp maple syrup (or additional 2tsp water for sugar free)
GOOEY TOP AND MIDDLE
1 tbsp nut butter
1 tsp maple syrup
1/4 tsp cacao powder
Method
Begin with the base and top of the pop tart
Stir the dry ingredients in a bowl until combined
Mix the wet ingredients in a small bowl and stir until the coconut oil has dissolved
Add the wet ingredients to the dry ingredients and mix until the mixture forms a ball
Roll the ball between 2 small sheets of baking paper, to prevent the mixture sticking to the surface and the rolling pin, into a long rectangle shape. The same width and a regular pop tart and twice as long
Cut the rectangle pop tart mixture in half so you have 2 x smaller rectangles, the base and top of the pop tart (ensure the base of the pop tart remains on the baking paper for baking)
Prepare the middle
Mix the gooey middle ingredients in a small bowl
Add half of the mixture to the base of the pop tart and add the top
Using the edges of a fork press down the edges of the op tart to seal in the middle layer and to get that classic pop tart look
Bake for 10 minutes
Allow the pop tart to cool slightly before add the rest of the gooey topping
Sprinkle with cacao nibs and let the pop tart fun begin!
