Bakewell Tart Baked Oats

Ingredients
Baked oats
1 tbsp flax
3 tbsp water
1/2 ripe banana
1 date
1 scoop (approx 25g) vegan protein powder
1/4 cup oat flour (blended oats)
1 tsp almond essence
1 tsp vanilla essence
1/3 cup plant milk
1 tsp baking powder
Middle and topping
2 large spoonfuls vegan yogurt
Small handful raspberries
Additional topping suggestion
Fresh raspberries, Love chocolate bar, nuts and seeds
Method
Preheat the oven to 280C and you’ll need a small oven proof bowl
In a small bowl mash together the flax, water, banana and date until they are combined
Add the protein powder, oats, almond & vanilla extract, milking baking powder and mix together unit combined
You may need to add a few more oats if the consistency is too runny, you’re looking for a thick batter
In another small bowl combine the yogurt and raspberries and mush together
Add half of the oat batter to the ovenproof bowl with a spoonful of yogurt on top (to create a gooey middle)
Add the rest of the oats and bake for 15-20 minutes
Remove form the oven and allow to cool for 5 minutes
Add the remaining yogurt and add our suggested or your own favourite toppings
