Courgette and pea fritters with avocado smash

These fritters are easy to make and packed with goodness. They’ll keep you feeling fuller for longer thanks to the avocado smash that goes so well with the fritters. I think you’ll love them x


Ingredients

300g cooked quinoa (left to cool)

1 large courgette, grated

1 onion, finely diced

2 cloves garlic, crushed

150-200g frozen peas

60g gram flour (chickpea flour)

45g self raising gluten free or regular self raising flour

90ml water

Large handful fresh coriander, chopped

Salt and pepper to season

Method

  • Cook the quinoa and allow to cool

  • Grate the courgette and squeeze out the water

  • Fry the chopped onion until softened

  • Ad the crushed garlic and cook for 1 minute

  • Add the courgette and peas and stir them until well mixed and gently heat for a few minutes

  • Mix the flours and water in a bowl until you have a thick paste

  • Add the veggies to the bowl and mix very well until evenly combined

  • Add the quinoa and mix again very well

  • Using your hands form gold ball sized balls by rolling the mixture in the palms fo your hands

  • Squish down each ball to form a flattened ball to create the fritter shape

  • Fry each fritter in a little oil for 3 minutes on each side

  • Add the fritters to a baking tray and once they are all cooked bake them for an additional 10 minutes to re-heat and crisp up.
