Waffles

These waffles make a great weekend breakfast or a breakfast for a special occasion. They also double up as a great dessert too. Top with your favourite toppings, we’ve gone for chocolate and a sprinkle of our Love Vegan bars, and you’re good to go.


Ingredients

1 1/2 cups vegan plant milk

2 tsp apple cider vinegar

1 tsp vanilla

2 cups plain flour

Pinch salt

2 tsp baking powder

2 tbsp maple syrup

1/4 cup vegan butter (melted)

To serve

Vegan chocolate ganache

Berries


Method

  • Mix the milk, vinegar and vanilla together in a small jug - this will make vegan buttermilk

  • Sift the flour, salt and baking powder into a bowl.

  • Add the butter milk, maple syrup and melted butter and stir until combined. You should have a thick batter.

  • Heat your waffle maker according to the instructions, scoop to a ladle (approx 1/2 cup) of waffle mixture and pour into the waffle maker.

  • Close the lid and cook, add each of the waffles to a warm oven until you’ve cooked used up all of the mixture.

  • Top with your favourite toppings, we went for vegan ganache and berries but maple syrup is good too…add a scoop of vegan ice-cream to make a delicious pudding too.
