Pumpkin purée always ready for some delicious creations


This is great when pumpkins are in season as they are so cheap and so versatile. I always have a freezer full of cooked, pureed pumpkin so I can make this delicious pasta anytime of the year, The pumpkin puree is also great to use in lots more savoury and sweet recipes. I think you’re going to love this pasta dish x


Ingredients

Enough pasta for 4 people (GF is needed)

The sauce:

1 onion

1 clove garlic - crushed

1 tin tomatoes

1 pre-roasted pumpkin

1/4 cup water

1 tin coconut milk

1 tsp ground cumin

1 tsp ground chilli powder

1tsp ground turmeric

Pinch chill flakes (use as much as you like the heat it creates)

Salt and pepper

Optional - toasted seeds and chilli flakes to top


Method

  • Pop the pasta on to boil whilst you make the sauce (enough for 4 people or use less pasta if you’re cooking for less people and save the extra sauce for another day)

  • Fry the onion and garlic on a low heat until the onions are translucent

  • Add tomatoes, pumpkin puree, water and coconut milk and stir

  • Place the sauce in the blender and blend until smooth

  • Pour the sauce back into the frying pan and add the spices, salt and pepper

  • Simmer for a few minutes until the pasta is ready

  • Drain the pasta and pour over the sauce

  • Add an optional sprinkle of toasted seeds and some more chilli flakes
