Tahini Pancakes

These pancakes can be whipped up in no time at all and are really delicious. 100% vegan and can be made gluten free too… but nobody would ever know. Perfect for a weekend treat and topped with your favourites.
Ingredients
70ml plant milk
1/4 ripe banana
1 tbsp flax
1 tbsp tahini
60g flour (spelt, wholemeal or gluten free)
1/4 tsp baking powder
1 tsp sweetener or sugar
To Top…we’ve gone for
Sweet tahini (tahini mixed with agave- I use about 1 tbsp tahini to 1 tsp agave, add more or less sweetener to suit your taste) or nut butter
Vegan yoghurt
Seasonal berries
1 Love Vegan caramel & peanut bar cut into chunks
Method
Mix together the plant milk, banana, flax and tahini until really smooth
Sift the dry ingredients and then add to the milk mixture and mix together. (Let the mixture rest for 5 minutes)
Add a little oil to a frying pan and spoon small rounds with the pancake mixture (I usually fit 4 small round into the frying pan)
Fry for 2 minutes each side and serve with your favourite toppings
