Tahini Pancakes

These pancakes can be whipped up in no time at all and are really delicious. 100% vegan and can be made gluten free too… but nobody would ever know. Perfect for a weekend treat and topped with your favourites.


Ingredients

70ml plant milk

1/4 ripe banana

1 tbsp flax

1 tbsp tahini

60g flour (spelt, wholemeal or gluten free)

1/4 tsp baking powder

1 tsp sweetener or sugar

To Top…we’ve gone for

Sweet tahini (tahini mixed with agave- I use about 1 tbsp tahini to 1 tsp agave, add more or less sweetener to suit your taste) or nut butter

Vegan yoghurt

Seasonal berries

1 Love Vegan caramel & peanut bar cut into chunks


Method

  • Mix together the plant milk, banana, flax and tahini until really smooth

  • Sift the dry ingredients and then add to the milk mixture and mix together. (Let the mixture rest for 5 minutes)

  • Add a little oil to a frying pan and spoon small rounds with the pancake mixture (I usually fit 4 small round into the frying pan)

  • Fry for 2 minutes each side and serve with your favourite toppings
