Banoffee Pie

One of my favourite desserts has to be a banoffee pie, I wanted to create a version that is not only vegan but also healthier than a regular banoffee pie that is often loaded with processed sugar. This contains just enough naturally occurring sugars so it tastes sweet enough to pass for an indulgent dessert at the same time as being a pretty healthy version too….and can be whipped up in no time at all.
This banoffee pie is lovely and gooey and really hits that sweet spot when you fancy something special to eat.

Ingredients
Oats Base
1 Love Vegan caramel and peanut bar
1 tbsp agave syrup
1 tbsp melted butter
50g oats
Middle Caramel (double the quantity for an extra gooey pie)
1/2 ripe banana mashed (1/2 banana sliced and kept to one side)
4 dates
1 tbsp milk
Creamy topping
4 tbsp coconut cream (solid part from a tin)
1 tbsp agave syrup
You may also use 4 tbsp Vegan vanilla yoghurt
Extra Toppings
Grated chocolate to sprinkle on top
Few fresh raspberries
Method
Blend the love vegan bar with the oats until crumbly
Divide the base into two individual tart tins, pushing down the base and the sides
Mash the middle ingredients together until it’s really smooth (you may need to soak the dates in a little water before, if they are not very soft)
(you may also use a small hand held blender but as the ingredients are so little you may need to scrape the sides down often and re blend)
Add the middle to the base and smooth down
Add the sliced banana to the caramel middle
Mix the coconut cream with the agave syrup and top over the caramel and sliced banana
Sprinkle with an optional tbsp grated vegan chocolate to make it extra tasty
