Tzatziki Dip

This is the perfect dip to accompany a range of foods to add a burst of delicious flavour, with the addition of being refreshing and creamy. Whether you choose it in a classic Greek meal (we like it with our ‘feta’ parcels, or pile it on top of your wraps or use it as a dip with your favourite crudities I’m sure you’ll love it. It’s also 100% vegan, healthy, easy to make and super tasty. It will keep for a couple of days in the fridge but is best eaten straight away.
Ingredients
1/2 cup vegan yogurt (I use the coconut collaborative as is nice and thick)
1 cucumber (grated or finely chopped with all the water squeezed out)
2 tablespoons olive oil
1 grated garlic clove
Squeeze of lemon juice
Salt and pepper to season
Method
Grate or finely chop the cucumber and squeeze out as much water as possible. You can pop the cucumber into a clean tea towel and squeeze or simply squeeze by hand.
Add the yogurt, oil, garlic and lemon juice to a bowl and mix
Add the cucumber and give another mix until its all evenly combined
Season with salt and pepper
Use straight away or chill until you’re ready to serve.
This is best eaten on the day but will keep in the fridge in a sealed container for a couple of days.
