Biscoff Rocky Roads

When you really need a sweet treat then these will do just the job. I make these every now and then for a treat and they honestly are gone is no time at all. They are quite dangerously addictive!

Great for parties or to take to family and friends for special occasions and get togethers, they are also great for picnics and lunch boxes. If you love the caramel tones of the classic Lotus Biscoff biscuit then you are going to LOVE these.


Ingredients

100g Lotus Biscoff biscuits

70g vegan butter

3 tbsp golden syrup

100g vegan chocolate (70% cacao works best)

50g vegan mini marshmallows

Note - I used the M&S vegan marshmallows which are too large, I simply chopped each marshmallow into quarters and used them, it gets a bit sticky but vegan mini marshmallow are harder to find than regular ones so if you can’t get the mini then just chop the regular size ones.


Method

  • Place the biscuits into a reusable bag and bash them with a rolling pin until you have a range of sizes from crumbs to the size of a 10p piece. Place them to one side

  • Place the butter, chocolate and golden syrup into a small pan and very gently heat until everything has melted and then stir well to combine it all together.

  • Add the broken biscuits to the pan and stir

  • Add the marshmallow and stir again, until everything is covered with the chocolate sauce.

  • Press the mixture to the lined tin and place in the fridge for at least a few hours but ideally over night so it can set completely. You ar then ready to slice and enjoy

To make your rocky roads extra indulgent why not drizzle the top with some melted biscoff spread and a sprinkling of broken biscoff biscuits?
