Triple chocolate cookies (HEALTHY)

These are my kind of biscuit as they are so much healthier than regular cookies. Loaded with almonds, a healthy sugar substitute called xylitol and our Love Vegan by Jennifer bars are in there as well to balance out the chocolate chip, there’s also cacao nibs too for that delicious bite… they really are a healthy treat.
I sometimes like to enjoy a couple of these with a plant based latte for breakfast when I am super busy or if I wake up with that sweet craving. They are also great to munch on with a cuppa for a tea break or an evening snack in the sofa. I hope you love them too :)
Ingredients
100g almond flour
2tbsp cacao powder
1/8 tsp salt
1/8 tsp bicarbonate of soda
1/4 cup chocolate chips
1 Love Vegan by Jennifer bar
1 tbsp cacao nibs
3 tbsp xylitol (healthy sugar alternative)
3 tbsp plant milk
Method
Preheat the oven to 180C and line a baking tray with baking paper
Combine all of the ingredients to a bowl and stir until combined
Using your hands roll out small balls until you have 12 of a similar size
Place each ball on the paper and squash down until it resembles a cookie shape, leave a little space between each cookie
Bake for up to 10 minutes but checking after 7 minutes and every minutes after, as they can burn easily once they are baked.
Enjoy whist warm as the chocolate chips and love vegan chunks are ooey and gooey.
They will keep fresh for about 5 days or so in a sealed container.
