Vegan Cookie Dough

This has got to be one of the simplest and tastiest cookie dough recipes I have tried. It was created by my youngest son Ollie when he wanted to bake something the whole family could enjoy so, it needed to be 100% vegan.

It is soft and gooey on the inside and slightly crispy on the outside. Once the dough is made it can be kept in the fridge for 3/4 days and just baked whenever you fancy something sweet and delicious.

This cookie dough tastes delicious on it’s own or to make it even more indulgent we like to sometimes top ours with a vegan chocolate sauce and a big scoop of vegan ice-cream.


Ingredients

225g caster sugar

200g vegan butter

200g plain flour

1 teaspoon baking powder

1 teaspoon vanilla essence

150 g vegan chocolate chips


Method

  • Cream the butter and sugar together in a large bowl until soft and fluffy

  • Sift in the flour and baking powder and stir

  • Add the vanilla and chocolate chips and mix together

  • Press the dough into individual oven proof bowls and bake in a preheated oven at 180 c for around 7 minutes or until the topping is just starting to brown

  • Leave to cool for about 5 minutes before eating (the dough will slightly harden around the edges but still be gooey in the middle)

Larger dishes will need about 15 minutes to cook if you’re cooking all the ingredients in one dish
