Vegan sausage and bean casserole ⠀

Sometimes you just crave comfort food and this is the perfect dish for just that. It's such a simple hearty dish to make and is perfect to enjoy with mash for ultimate comfort food or pasta for a lighter meal.

I used beetroot 'sausages' that are available form most supermarkets. If you cant find beetroot sausages then any other vegan sausage will be just as good.

When vegan sausages are combined in this beany stew you honestly wouldn’t know they are vegan...perfect if you have meat eater in the family.⠀


Ingredients


1 packet of vegan sausages⠀
4 rashers of vegan 'bacon'⠀
1-2 tins of mixed beans in a spicy sauce
1 tin of chopped tomatoes⠀
2 red peppers⠀
Sun-dried tomatoes (as many as you like) I used a whole tub.⠀

Method


1. Chop and slice the peppers, pop onto a baking tray with the sausages and cook for around 20 mins 180C⠀
2. Pan fry the 'bacon' and chop into bite sized pieces⠀
3. Add the tinned beans and tomatoes to a pan and season well. Add the 'bacon' and sun-dried tomatoes and simmer over a low heat until bubbling.⠀
4. Once the vegan sausages and red peppers have cooked add them to the bean mixture, transfer to a heatproof dish and you're ready to go.⠀


Such a simple and tasty dish to make, this is always a winner in our household. If you have any left-overs it makes a lovely lunch the following day too
