Vegan Dandelion Honey

To all my fellow vegan…we have honey! I can’t remember the last time I had honey so this is a real treat for me. It tastes just as I remember it, and I’ve done a taste test with my non-vegan family members and they say it tastes like honey too. Not 100% but ALMOST an exact taste match. You have got to try this.
Perfect for spreading, drizzling, baking or use to sweeten your tea and coffee.
Ingredients
🍯60g dandelion petal (the middle & stalks removed) this is a round 3-4 full cups
🍯1 litre water
🍯2 slices lemon
🍯1 tbsp vanilla bean pasre(optional)
🍯550g granulated sugar
Method
🐝Soak petals for 5 minutes in water (to rinse)
🐝Drain petals and add them to a pan with the water, lemon and vanilla, boil then reduce to a simmer for 30 mins (this makes a strong dandelion infusion)
🐝Stain and discard the petals. You’ll be left with around 650mls of strong dandelion infusion, add this back to the pan.
🐝Gradually add the sugar to the dandelion infusion, stirring until combined
🐝Bring to boil the simmer for around 45 mins-1 hour.
🐝You will notice the honey thicken as it simmers, after 45 mins check the consistency and if it look quite think and has changed to a caramel colour, remove form the heat. (It will continue to thicken as it cools too)
🐝Once cooked add to a sterilised jar and it’ll keep for a month or so…if it lasts that long!
