When we first developed our high protein salted caramel and peanut bites my brief was ‘ make a snickers’ after playing around a lot with salted caramel and pea protein we not only developed a great tasting bar but the consistency was very similar to the nought part of the snickers bar. On it’s own it’s not only high protein, (10.1g per bar) but also very delicious. When you add a healthy caramel centre and a smidge of chocolate you are still keeping it relatively healthy, but the taste… it will just blow you away!

When I created this version I was craving something very indulgent and I simply used what I had to hand in the kitchen, I’m thrilled with how it turned out. This is very quickly turning into my most popular no bake recipe. I really hope you love it as much as me.

Ingredients

4 x Salted caramel and peanut protein bites

2 dates

1 tbsp agave/maple syrup

1 tbsp plant based milk

8 small chunks of vegan chocolate (use more if you’d like a super chocolate bar, or to make your own click here -> sugar free chocolate

Method

  • Slice each protein bar lengthways so you remove about 1/3 of the bar. (you will be left with a flat base)

  • Place the slithered tops to a small bowl

  • add the dates, syrup and plant milk to the bowl and squish up using the back of a fork until you have a smooth consistency apart from the nuts from the bar.

  • Top each flat bar with a teaspoon of the caramel middle and place in the fridge to chill whilst you melt the chocolate

  • Melt the chocolate however you choose and carefully spoon over the caramel layer and smooth down the sides. If you have decided to use more chocolate then you can dip the whole bar in chocolate

  • Leave to set in the fridge or if you have completely covered theirs allow them to drip on a wire rack before refrigerating
