Vegan ‘Secretly Healthy’ Pancakes

The secret healthy ingredient in these pancakes is PUMPKIN! Honestly you can’t taste them so don’t worry! Pumpkins are great to use in sweet dishes as they’re really healthy but they are also good for binding ingredients together in vegan cooking. You’ll need some pumpkin puree so I usually boil and puree my pumpkin up the day before as it work better when the puree is cold. It also freezes well so if you have extra puree then you can freeze it and use it for anther day. I usually freeze mine in small moulds or freezer bags and defrost the night before i need them. If pumpkins are not in season then any other squash will do. You can also buy tins of pumpkin puree however, it’s quite expensive, just make sure it’s 100% pumpkin puree and not pumpkin pie filling.

This recipe is really simple and a favourite in our house, we like to enjoy them on a weekend when we have some extra time to spend in the kitchen, that said, they don’t take that long to make as all the ingredients are mixed together in one bowl and then the fun and flipping begins!


Ingredients

Half a medium sized pumpkin, cooked and pureed

200g porridge oats, can be gluten free if needed (blended into a fine powder)

300 ml of dairy free milk

4 tablespoons of maple syrup

1 teaspoon of baking powder

oil for frying (I use coconut)

Your favourite ingredients to serve; I used homemade chocolate spread, banana, love vegan bar chunks and a selection of nuts. If you’re feeling like you want a sweet indulgent caramel sauce to top your pancakes then how about this sweet and sticky caramel sauce?



Method

  • Prepare the oats by blending them into a fine powder and add them to a large mixing bowl

  • Add all of the ingredients to the bowl

  • Mix everything together until you have a nice thick batter

  • Add a little oil to a pan and gently heat

  • Using a ladle add a small amount of the mixture to the pan (about the size of an american pancake)

  • Fry for a couple of minutes each side, until golden brown in colour

  • Serve topped with maple syrup for natural sweetness and finish with your favourite toppings.
