Chunky Spicy Sweetcorn Fritters

These chunky sweetcorn fritters are a big hit in our house, the original recipe came form a good friend and we love it. We like to eat them with some homemade beans or with a simple yogurt dip and salad. They are 100% plant based and so easy to make, they also freeze really well so I often double the quantities and freeze half for another day.


Ingredients

120g gram flour

1/2 teaspoon baking powder

2 teaspoons cumin

2 teaspoons coriander

Pinch cayenne pepper

1/2 teaspoon salt

200g sweet corn (Fresh, frozen or tinned)

3 spring onions

160ml water

Optional but extra tasty

Handful fresh coriander

Half red chilli finely sliced OR pinch of dried chilli flakes


Method

  • Sift the dry ingredients into a large mixing bowl

  • Mix in the sweetcorn, spring onion, coriander and chilli

  • Stir in the water

  • Add a splash of oil to a frying pan

  • Add a spoonful of the sweetcorn fritter mixture to the pan (I usually make 4 small fritters per pan)

  • Fry for a couple of minutes each side and keep the finished fritters warm whilst you make the rest.

  • Serve with either beans and avocado, salad and dips or whatever else you like to eat.


I hope you love these as much as we do. if you have any fussy eater in your house (as we do) you can also blend the sweetcorn before adding them for a smooth fritter…saves picking them out for the fussy one :)
