Italian Pasta Sauce

You're mid-week meal just got better with this better than shop bought pasta sauce. Ready in no time at all and LOADED with veggies, NO sugar and only a pinch of salt this is a really healthy sauce. Just add vegan 'meatballs' roasted veggies and a ton of spaghetti and you're good to go.

This is an absolute favourite in our household and my kids can easily make this from scratch it’s that easy. I’ve included enough for 2 family meals as the sauce will keep for around 3 days or so and it also freezes really well too, saving you time for your next meal.


Ingredients

2 onions, finely chopped

Teaspoon olive oil (for frying)

2 cloves garlic, minced

2 peppers, chopped into small chunks

1 punnet of tomatoes

2 tins chopped tomatoes

2 tablespoons tomato puree

Splash of red wine (optional but tasty)

1 tablespoon of mixed Italian herbs

Salt and pepper to season


Method

  • Gently fry the onions in a little olive oil over a low heat until they start to soften

  • Add the garlic and mix together

  • Add the peppers and continue to gently fry until soft

  • Add the fresh tomatoes and fry for another 5 minutes

  • Add the tinned tomatoes and tomato puree and mix everything together

  • A splash of red wine next with a table spoon of herbs, and season really well, and another mix

  • Gently simmer for 20 minutes to allow the alcohol in the wine to cook out and the ingredients to soften completely.

  • Add more water if the mixture starts to become too thick.

  • Allow to cool before blending to a smooth puree

left over sauce will keep in the fridge for a around 3 days or you may also freeze it as well and save it for another day.
