Vegan Rocky Roads

Say hello to these easy five ingredient rocky roads. They are super gooey, tasty and so moreish, always 100% vegan but you would NEVER guess. You can whip them up in no time at all and they’ll disappear in less time than it takes to make them.

Ingredients

200g Digestive biscuits (use gluten free if needed)

135g Vegan spread

200g Vegan dark semi-sweet chocolate

4 Tbsp golden syrup

100 g Vegan mini marshmallows


Method

  • Line a brownie sized baking tin, leaving an overhang of baking paper to help you get the rocky roads out when they’re ready

  • Crush the biscuits by placing them into a large sandwich/freezer bag (reusable) and bash them with a rolling pin. You’ll want pieces ranging from the size of a 10p piece to crumbs, then pop them into a large mixing bowl

  • Melt the butter, dark chocolate and golden syrup in a small bowl over a gentle heat and stir until completely melted and combined

  • Add the mixture to the biscuits and give a little mix so that the mixture cools slightly then add the marshmallows and mix completely

  • Pop the mixture into the lined tin and chill for at least 2 hours

  • Remove from the fridge, remove the rocky road and slice into 12 pieces.

  • Dust with icing sugar before serving.


Enjoy this with a cup of your favourite drink, I’d recommend trying this perfect vegan Starbucks latte. and find a nice place to hide before demolishing.
