Buttery Caramel Oaty Bites

Say hello to one of my favourite snacks ever. I usually make these at least once a month and they never last long. Buttery and sweet with caramel tones and chocolate on top…what more could you wish for?
They are soft, sweet and just crumbly enough for them have that melt in the mouth feel whilst still holding well together.
Ingredients
Base
100g oats (can be GF)
50g coconut sugar
65g plant based butter
2 tbsp chia seeds
Middle
100g dates
100g peanut butter
Topping
1/4 cup cacao powder
1/4 cup maple syrup
1 tbsp coconut oil (melted)
OPTIONAL TOPPING TO SPRINKLE - Chocolate chips, chia seeds, Love Vegan bar (broken & sprinkled) and a few oats.
Method
Part One
Melt the butter and stir in the sugar until it has dissolved and you no longer have any grains
Add the oats and chia seeds and stir in well until the oats and seeds are coated
Press the oat base into a mould or into a small lined tin
Part Two
Melt the peanut butter and add the dates
Mash them together using a fork or masher (if you have a small blender you can bend the ingredients in that however, as the ingredients are such a small quantity they won’t blend in a large blender)
Add the middle to the base, spreading it evenly to the edges, leave this to chill in the fridge whilst you prepare the topping
Part Three
Combine all the topping ingredients together in a bowl and whisk until it’s lump free
Spread down the middle layer once more, it’s a little less sticky once it’s cooled down so you’ll be able to get a smooth finish
Pour the chocolate topping over the middle and smooth to create a straight top layer, pop in the fridge for an hour to set
We added some some oats, chocolate chips and a crumbled Love Vegan by Jennifer bar to the top chocolate layer for that extra hit of indulgence
