Cakey Baked Oats

It really amazes me that breakfast oats can actually replicate the look of a tasty cake…you really can have your cake and eat with this breakfast.
It’s really healthy, tasty and quick& easy to make too, which is always a win-win!
Ingredients
Baked oats
50ml vegan milk
1 tsp apple cider vinegar
30g oat flour (blanded oats)
25g/1scoop vegan protein powder
15g vegan yogurt
1 tsp sweetener/sugar
Chocolate middle
1 tsp vegan chocolate spread (we make our own chocolate Nutella)
Suggested toppings
Drizzle of vegan chocolate spread
Crushed fresh/frozen raspberries
1/2 love vegan bar
Method
Preheat the oven to 180C
Grease an oven proof bowl/loose bottomed small cake tin
This is necessary if you’d like to remove the cakey oats once they have cooked. If you want to eat them straight form the bowl them you can skip this step.
In a small bowl add the apple cider vinegar to the plant milk to create a butter milk and rest for a few minutes
Add the flour and protein powder to another bowl and stir to combine
Add the yogurt and sweetener to the buttermilk bowl and stir
Add the wet buttermilk ingredients to the dry oat mixture and stir really well until fully combined
Add half of the oat mixture to the oven proof bowl, add a spoonful of chocolate spread to the middle and then top with the remaining oat mixture
Bake for 15-20 minutes
Drizzle, load or top with our suggested toppings, or add your faves
