Cherry Muffins (Gluten Free)

These muffins are great for breakfast at the weekend or as a tasty snack to enjoy with a coffee mid morning. They are gluten free but you can use regular flour if you are not following a G/F diet.
Just a little note on gluten free bakes, they do tend to be a little drier and don’t last as long as as gluten bakes so they are best eaten within a few days and I’ve also found that if you eat these straight away they do tend to stick to the muffin cases. Using a knife around the edges of the muffin cases helps to get them out better or leaving then until the next day helps the muffins come out without any trouble at all…if you can wait that long! Ingredients
2 tbsp ground flax seed mixed with 5 tbsp water (flax egg)
3 ripe bananas
1/2 cup vegan yoghurt
1/4 cup rapeseed oil
1 tbsp apple cider vinegar
2 cups gluten free flour (use regular self raising flour if you udon need gluten free)
1/2 cup coconut sugar
Pinch salt
1 cup cherries (fresh or frozen, sub for preferred berries or chocolate chips)
Method
Preheat the oven to 180C and prepare a 12 hole muffin tray with muffin cases
Mix the flax seed with the water and leave to thicken for 10 minutes
Mash the bananas in a large mixing bowl
Add the flax egg and yoghurt to the banana and mix together
Now add oil and cider vinegar and mix again
Add the flour, sugar and salt & mix together until combined
Add berries and one last stir to combine the fruits
Spoon the mixture into the muffin cases - about 3/4 full as they’ll rise a bit too.
Bake for 15-20 minutes, or until cooked all the way through
Top with nut butter or enjoy as they are.
