Vegan Chewy Oats Biscuits

I have the ultimate vegan oaty biscuit recipe. They are really simple to make, crunchy on the outside and soft and gooey in the middle. Sweet, delicious and taste even better when they’re still warm from the oven. 100% powered by plants and guaranteed to be enjoyed by everyone!
Ingredients
Dry ingredients
150g Rolled oats (can be GF)
120g Plain flour (use GF flour if needed)
80g Dried coconut
1 tsp Baking powder
Pinch of salt
1 Tbsp Cinnamon
200g Brown sugar
Wet ingredients
200g Vegan spread (butter)
3 Tbsp Golden syrup
1 Tbsp dairy free milk
Method
Preheat your oven to 180 C
Add the dry ingredients to a bowl - the oats, flour, coconut baking powder, salt and cinnamon and give a little mix.
Add the wet ingredients - sugar, butter, syrup and milk to a separate bowl and whisk together using an electric whisk until well combined.
Add the wet ingredients to the dry and mix together until a ball starts to form.
Using your hands check that you’re able to make a ball with the dough (add more milk if it’s too crumbly)
Roll into small balls and place them on a lined baking tray
Lightly press each ball down a little and pop into the oven for 15 minutes or until golden brown.
Allow to cool for a little while and enjoy whilst still warm.
They are best eaten warm but will still taste great for the next couple of days (if they last that long!) and enjoy with a cup of tea or coffee.
