Vegan Cottage Pie

This is a perfect dish that the whole family can enjoy, I have made this for the biggest meat eaters and even they love it. As this cottage pie is so simple, it’s a perfect dish to make when you don’t have a lot of time to spare in the kitchen. It can always be made in advance and simply warmed in the oven later on in the evening when you’re ready for dinner. It is totally comforting, satisfying, filling, delicious and it hard to believe it’s so easy to make and 100% plant based
Ingredients
Mince substitute (I used The Meatless Farm Company)
1 Onion
1 Carrot
1 Vegan stock cube
1 small cup of gravy (either homemade or gravy granules)
1 Tin of beans or make your own
For the creamy mash:
5 large potatoes
1 large spoon of vegan spread
A dash of vegan milk (I use cashew)
Sea salt and pepper to season.
Method
Pop the oven on to 180 C
Prepare the veggies
Finely chop the onion and carrot
Peel and chop the potatoes and pop them on to boil whilst you make the filling.
Fry the onions until they soften
Add the carrot and continue to fry for around 5 minutes.
Add your meat substitute and fry until cooked all the way through.
Add the stock cube to small cup of boiling water and mix until dissolved and pour it into the frying pan
Add the baked beans and stir it all together
Make the gravy according to the instructions (if your’e not making your own from scratch) and add enough gravy to the filing until its to your liking.
I like my cottage pie quite sloppy so I add enough gravy so all the filling is covered.
Once the potatoes are cooked, mash them adding about a table spoon of vegan spread and a little cashew milk at a time until you have a nice creamy consistency.
Season with salt and black pepper.
Add the filling to an oven proof dish and top with the mash
Bake the pie for around 20-30 minutes or until the potato is nice and crispy.
*If you are in a hurry you can always pop the dish under the grill to save cooking time.
Serve with veggies of your choice and lots of gravy.
