Chocolate and peanut butter pancakes

These pancakes are light and fluffy whist being sturdy enough to create the perfect stack. Layer with chocolate and peanut butter for a delicious breakfast treat.
They’ll also be great to eat for dessert or a sweet treat too.
Ingredients
Dry ingredients
130g buckwheat flour
40g oats (blended to a fine powder)
2 tbsp coconut sugar
1 tsp baking powder
1/2 tsp cinnamon
pinch salt
2 tbsp flax seed powder
Wet ingredients
1 tin of coconut milk
To Top
Vegan choc spread
Peanut butter (smooth)
Raspberries
2 love vegan bars cut into chunks (cherry flavour)
Method
Place the dry ingredients into a large bowl
Add the coconut milk and mix together
Leave to rest for 5-10 minutes (otherwise the pancakes will be tough)
After the pancake mixture has rested simply spoon or ladle small sized rounds into a large frying pan, I usually manage to fit 4 pancakes per frying pan. If you use non-stick you don’t need any oil, if not pop a teaspoon of oil in before adding the pancake mixture.
Fry for a couple of minutes each side
Once cooked, keep warm whilst you make the rest of the pancakes
Stack the pancakes with layers of chocolate spread and peanut butter (alternate each per pancake)
Top with love vegan chunks, raspberries and an extra drizzle of peanut butter/choc spread and enjoy!
