Creamy mousse loaded with cacao chunks & fruit

This is the creamiest and most basic version of a delicious made using aquafaba - aka water from a tin of chickpeas.
You can add any flavours to the mousse once it’s been whipped up to suit your taste, peanut butter or vegan chocolate spread is nice for an indulgent mousse or simply add fruits and lemon curd for a light and refreshing mousse. Here I have left the mousse classic white and added small chunks of our Love Vegan bars for added texture and flavour and topped it with fresh fruit and cameral sauce.
Ingredients
1 tin of the water from a tin of chickpeas JUST THE LIQUID (save the chickpeas for another recipe- try this)
1 tsp apple cider vinegar
1 large teaspoon or I small sachet of cream of tartar
125g caster sugar
4 Morello Cherry Love Vegan Bars

Method
Add the chickpea water to a cake mixer with the whisk accessory and leave to whip up for around 10 minutes. You may use a hand held mixer but it takes a long time to get the perfect peaks.
as the liquid is becoming a little thicker add the apple cider vinegar and cream of tarter and continue to whisk for another 10 minutes or so.
Once the liquid has become light and fluffy it’s time to add the sugar. You can check the correct consistency by holding the bowl upside down and the contents should stay put. if not whisk a little longer.
Once the liquid had become thick and creamy begin to add the sugar one large spoon at a time and whisk for 1 minute before adding another spoonful. YOU MUST LEAVE ENOUGH TIME BEFORE ADDING MORE SUGAR OR THE MOUSSE WILL GO FLAT
Once all of the sugar has been fully combined leave the bowl of mousse to one side so you can prepare the filling.
Simply cut the Love Vegan bars into small chunks, add them to the mousse and fold them in until they are combined
Spoon the mixture into a bowl or serving glass and top with berries and vegan sauce.
